Use the backup function, as it is foolproof.
To make a backup manually, you must copy .conf files from
/etc/pve/qemu-server , and at least copy virtual disk files, that may be
in a directory or not depending on the storage type. There could be
other caveheats.
The built-in backup resolves all that for you :)
