By default Proxmox uses root for container templates, ISO images and
backups; but you can add new storages for such things from the GUI.
We use 20 GB as root partition size in out Proxmox environment (1,5 TB
of total storage in each server, about 25 VMs in dual-node cluster), and
then configure storages in an external NAS for backups and ISOs (no vz
containers in our setup).
That has worked perfectly well for us.
