Hi,

If you're lucky enough to have a cluster composed of several physical 
hosts (+ shared storage) you can just migrate them to another node, 
upgrade the 'empty' node, reboot it, migrate back the VMs, and so on.

This is how I proceed for my 4 proxmox hosts (same cluster).
