What I don't know is whether Veam can just restore the vSphere disk image to a directory that I can access, or does it only restore to a vSphere Store?<br>

What I did in such a situation was the following:<br>
- Stop al VMWare VMs<br>
- Download VM disks to another media (optionally check that you can run successfully them on another proxmox server)<br>
- Format vSphere server to Proxmox<br>
- copy and qemu-img the disk images<br>
<br>
I suggest you uninstall vmware tools before stopping the VMs.<br>
